Wholesome Fluffy Oat Pancakes

Ingredients:

1 cup all purpose flour
1 cup oat flour (i.e., blended oats)
¼ cup coconut sugar
4 tsp baking powder
½ tsp baking soda
½ tsp salt
1 ¾ cup oat milk
¼ cup Greek yogurt (plain or vanilla)
2 tsp pure vanilla extract
1 large egg
Instructions:
In a large mixing bowl, whisk together the all-purpose flour, oat flour, coconut sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, whisk together the oat milk, Greek yogurt, vanilla extract, and egg until smooth.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; it’s okay if there are a few lumps. Let the batter sit for 5 minutes to allow the baking powder to activate, which helps with fluffiness.
Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter, oil, or non-stick spray.
Scoop about ¼ cup of batter onto the skillet for each pancake. If desired, add blueberries or chocolate chips! Cook for 2-3 minutes on the first side, until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes on the other side, until golden brown and cooked through.
Stack the pancakes and serve warm with your favorite toppings like fresh fruit, maple syrup, or whipped cream.
