Teriyaki Cauliflower Rice Bowl

Ingredients

  • 6 oz Real Good Foods chicken  

    • (Note: can substitute for your protein of choice! Ground chicken/turkey or pork works well, as does air fried tofu)

  • 1 package frozen steam-in-bag cauliflower rice  

  • 1 tsp sesame oil  

  • ½ tsp each

    • Dash Salt-Free Garlic & Herb Seasoning

    • Trader Joe’s Green Goddess Seasoning

    • Chili Lime Seasoning  

  • 1 cup steamed green beans (or cabbage slaw mix)  

  • 1 tbsp teriyaki sauce 

  • 1 tbsp sweet chili sauce  

  • 2 tbsp sliced green onions  


Instructions

  1. Cook the chicken in the air fryer according to package instructions (I do 15 min @ 395 degrees) 

  2. Microwave the cauliflower rice for 4 minutes. Meanwhile, heat a large skillet over medium-high heat

  3. Crisp the rice in the skillet with sesame oil and seasonings, stirring occasionally until all liquid is evaporated 

  4. Add green beans (chopped into 1-inch pieces) once steamed, and cook for another minute

  5. Chop the cooked chicken and add it to the skillet

  6. Mix in the teriyaki sauce and stir until everything is well-coated

  7. Transfer to a bowl, drizzle with sweet chili sauce, and top with sliced green onions

  8. Enjoy!
