Simple & Delicious Chicken Cutlets

Ingredients

  • 1 lb thin-sliced chicken breast

  • 1/2 cup flour

  • 2 eggs, beaten

  • 1 cup panko breadcrumbs

  • 1/4 cup Parmesan cheese, grated

  • Salt

  • Pepper

  • Italian seasoning blend

  • 2 tbsp olive oil


Instructions

  1. Remove the chicken breasts from the packaging and pat them dry. Set aside on a plate.

  2. Prepare three plates:

    • Plate 1: Spread the flour evenly over the bottom.

    • Plate 2: Beat the eggs and pour them onto the second plate.

    • Plate 3: Mix the panko breadcrumbs and grated Parmesan cheese together.

  3. Coat the chicken:

    • Dip each chicken breast in the flour, lightly coating both sides.

    • Then dip it in the egg wash, allowing any excess to drip off.

    • Finally, press it into the breadcrumb and Parmesan mixture, ensuring both sides are well-coated.

  4. Once all chicken breasts are breaded, set them aside on a clean plate.

  5. Heat a large skillet over medium-high heat and add the olive oil. Allow the oil to heat for about 5 minutes.

  6. Place the breaded chicken breasts in the skillet. Cook for 5-7 minutes on each side, until golden brown. Before flipping, sprinkle each side with salt, pepper, and Italian seasoning.

  7. Once all cutlets are cooked, slice and serve with Spanish rice and a simple arugula salad dressed with lemon juice, salt, pepper, and a drizzle of olive oil.
