Roasted Sweet Potato & Pomegranate Salad

Ingredients

3 medium sweet potatoes, thinly sliced
3 tbsp olive oil
Salt and pepper, to taste
1 large head of crunchy lettuce (Gotham Greens or your preferred type)
1 ½ cups pomegranate seeds
1 cup regular or vegan feta cheese
2 large apples or pears, thinly sliced
1 large avocado, sliced
1 cup sesame cashews or honey almonds, thinly sliced
½ cup Champagne vinaigrette (Trader Joe's) or your favorite homemade dressing
Instructions
Roast the sweet potatoes: Preheat your oven to 400°F (200°C). Toss the thinly sliced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden brown and tender. Let them cool slightly.
Assemble the salad: In a large serving bowl, layer the crunchy lettuce. Add the roasted sweet potatoes, pomegranate arils, thinly sliced apples or pears, avocado, and feta cheese. Sprinkle the sesame cashews or honey almonds on top for extra crunch.
Dress and serve: Drizzle generously with Champagne vinaigrette or your preferred dressing. Toss gently before serving.
