Orange Cashew Tofu Lettuce Wraps

Ingredients:

  • ⅓ cup coconut aminos

  • 2 tbsp rice vinegar

  • 2 tbsp tomato paste

  • Juice of one orange

  • 1 tbsp cornstarch

  • 1 tsp sesame oil

  • 3 cloves garlic, minced

  • 1 inch fresh ginger, grated

  • Black pepper and red pepper flakes, to taste

  • 1 block extra-firm or high-protein tofu

  • ⅓ cup cashews

  • 1 cup white rice

  • Butterhead lettuce

  • Sesame seeds (optional for topping)


Instructions:

  1. Cook the rice in a rice cooker or according to package instructions

  2. In a small bowl, whisk together the coconut aminos, rice vinegar, tomato paste, orange juice, cornstarch, sesame oil, garlic, ginger, black pepper, and red pepper flakes

  3. Heat olive oil in a pan and pan-fry the tofu until golden on all sides

  4. Add the cashews to the pan and toast for a couple of minutes

  5. Pour the sauce into the pan over medium heat and stir until it thickens and coats the tofu and cashews

  6. Serve the orange cashew tofu on lettuce wraps with the white rice, and top with sesame seeds if desired
