Nut Butter Banana Bread

Ingredients:

4 very ripe bananas
1 large egg
1 tbsp vanilla extract or vanilla bean paste
3 tbsp light brown sugar
2 tbsp granulated sugar
1 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1½ cups all-purpose flour
2 tbsp nut butter (almond, cashew, or peanut butter)
½ cup dark chocolate chips (plus extra for topping)
Instructions:
Prepare the pan: Grease a 9x5-inch loaf pan and line the bottom with parchment paper. Preheat the oven to 350°F.
Mix the wet ingredients: In a large bowl, mash the bananas. Add the egg, vanilla, brown sugar, granulated sugar, and cinnamon. Stir until well combined.
Combine the dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the banana mixture, stirring until just combined.
Add mix-ins: Stir in the nut butter and chocolate chips. Pour the batter into the prepared loaf pan and sprinkle extra chocolate chips on top.
Bake: Place in the preheated oven and bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean.
Cool & enjoy: Let the banana bread cool in the pan for 5-10 minutes before transferring to a wire rack. Slice and enjoy!
