Mediterranean Chicken Bowls

Ingredients

Chicken:

  • 1 pack chicken breast tenders

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Green Goddess seasoning (Trader Joe’s)


Salad:

  • 1 head romaine lettuce, chopped

  • 1 cup cherry tomatoes, sliced

  • 1 tbsp capers

  • 1 tbsp sliced black olives (optional)

  • Thinly sliced red onion

  • Olive oil, for drizzling

  • Red wine vinegar, for drizzling

  • Salt and pepper, to taste


Toppings:

  • Naan bread

  • Tzatziki sauce (store-bought or homemade)


Instructions:

  1. Toss the chicken with olive oil and spices, then air fry at 360°F for 20 minutes.

  2. Prepare the salad by combining lettuce, tomatoes, capers, olives, and red onion. Drizzle with olive oil and red wine vinegar, then season with salt and pepper.

  3. Heat naan on a skillet, then cut into quarters.

  4. Slice the cooked chicken and assemble the bowls with salad, chicken, naan, and tzatziki.
