Honey Sesame Cashew Grain-Free Granola

Ingredients:

1 cup Trader Joe’s honey sesame cashews
1 cup raw pecans
½ cup raw walnuts
½ cup unsweetened coconut flakes
½ cup pumpkin seeds (pepitas)
2 tbs chia seeds
2 tbs flaxseeds (or flaxseed meal)
1 tbs cinnamon
1 tsp sea salt
2 tbs coconut oil, melted
2 tbs raw salted almond butter
3 tbs maple syrup
1 tsp vanilla extract (or vanilla bean paste)
Instructions:
Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.
In a large bowl, combine walnuts, pecans, cashews, coconut flakes, pumpkin seeds, chia seeds, flaxseeds, cinnamon, and sea salt. Stir to mix evenly.
In a small bowl, whisk together the melted coconut oil, almond butter, maple syrup, and vanilla extract until smooth.
Pour the wet mixture over the dry ingredients and stir until all the nuts and seeds are evenly coated.
Spread the granola mixture in an even layer on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until golden and fragrant. Watch closely toward the end to avoid burning.
Let the granola cool completely on the pan—this is when it becomes crunchy. It will firm up as it cools.
Once cool, sprinkle in cacao nibs, dried fruit, dark chocolate, or any other add-ins you like for extra flavor and texture.
Transfer to an airtight container. Store at room temperature for up to 2 weeks.
