Healthier Monster Cookies (GF Option!)

Wet Ingredients

3/4 cup all-natural creamy peanut butter, stirred well
2/3 cup coconut or brown sugar
1 tsp vanilla bean paste
1/2 cup (1 stick) vegan or regular salted butter
1 egg
Dry Ingredients
3/4 cup regular or GF rolled oats
3/4 cup regular or GF flour (can use oat flour)
1/2 tsp baking soda
1/2 tsp salt
1/2 cup MnM's
1/4 cup peanut MnM's (or chocolate chips)
Instructions
Melt the butter, and in a large mixing bowl cream together butter, peanut butter, sugar, and vanilla. Once combined add the egg and beat on low speed until combined.
Add the dry ingredients to the wet ingredients: oats, flour, baking soda, and salt. Once the mix is uniform fold in the MnM's and chocolate chips, if using.
Chill the dough for at least 30 minutes. While the dough is in the fridge, preheat the oven to 350 degrees.
Line two cookie sheets with parchment paper. Using an ice cream scoop, form dough balls of desired size and place 2 inches apart. Bake for 9-11 minutes and allow to cool for an additional 10-15 minutes prior to serving.
Store in the fridge for an even more decadent and fudgy cookie. Enjoy!
