Crispy Chipotle Honey Air Fryer Salmon Bowls

Ingredients

For the Salmon:
2 salmon fillets (about 6 oz each)
1 tbsp olive oil
1 tbsp honey
1 tsp chipotle powder
½ tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
½ tbsp lime juice
¼ cup panko breadcrumbs
2 tbsp grated Parmesan cheese (optional, for extra crispiness)
1 tbsp flour (or cornstarch)
For the Roasted Potatoes:
2 medium Yukon gold or red potatoes, diced
1 tbsp olive oil
½ tsp garlic powder
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
For the Steamed Broccoli:
2 cups broccoli florets
Salt & pepper, to taste
Juice of 1/2 lemon (optional)
Instructions
Roast the Potatoes:
Preheat the oven to 425°F (or use an air fryer at 400°F).
Toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
Spread on a lined baking sheet and roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.
Prepare the Salmon:
In a small bowl, mix olive oil, honey, chipotle powder, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice.
In another small bowl, mix panko breadcrumbs, Parmesan (if using), and flour.
Pat the salmon fillets dry, then brush them with the chipotle honey mixture.
Gently press the breadcrumb mixture onto the top and sides of the salmon to create a light crust.
Air Fry the Salmon:
Preheat the air fryer to 400°F.
Lightly spray the air fryer basket with oil and place the salmon fillets skin-side down.
Air fry for 8-10 minutes, or until the salmon is golden and crispy.
Steam the Broccoli:
While the salmon is cooking, steam the broccoli in a steamer basket over simmering water for 5-6 minutes until tender but still vibrant green.
Toss with salt, pepper, and optional lemon juice.
Assemble & Serve:
Plate the crispy salmon alongside the roasted potatoes and steamed broccoli.
Drizzle any remaining chipotle honey glaze over the salmon if desired.
