Chicken Sausage & Veggie Bowls

Ingredients

  • 1 bag of small red potatoes, washed and cut into wedges

  • 1 tablespoon olive oil

  • Seasonings of choice (e.g., Trader Joe’s Green Goddess seasoning, salt, paprika)

  • 1 package Apple Gouda Chicken Sausage (found at Target)

  • 1 bag of green beans (microwaveable)

  • 1 cup cherry tomatoes, halved

  • Sea salt, to taste

  • Pepper, to taste

  • Optional: BBQ sauce, ketchup, and/or honey mustard for serving


Instructions

  1. Prepare the Potatoes

    • Bring a pot of water to a boil, add the potato wedges, and boil for about 10 minutes until fork-tender.

    • Drain the potatoes and toss in a bowl with your chosen spices and olive oil.

    • Place in the air fryer and cook potato wedges at 400°F for 20 minutes, shaking the basket every 5–7 minutes to ensure even crispiness.

  2. Cook the Chicken Sausage

    • Heat a pan over medium heat and spray lightly with olive oil.

    • Add the chicken sausage and pan-fry until crispy, about 5–7 minutes.

  3. Prepare the Green Beans

    • Microwave the green beans in their bag for 4 minutes, cutting a small vent in the bag to release steam.

  4. Season the Cherry Tomatoes

    • Slice the cherry tomatoes in half and season them with sea salt and pepper to taste.

  5. Assemble and Serve

    • Combine the potatoes, chicken sausage, green beans, and cherry tomatoes in a large serving bowl.

    • Serve with your favorite dipping sauces, such as BBQ sauce, ketchup, or honey mustard, if desired.

This dish is quick, healthy, high in protein, and perfect for a busy weeknight dinner!
