Chicken Sausage & Veggie Bowls

Ingredients

1 bag of small red potatoes, washed and cut into wedges
1 tablespoon olive oil
Seasonings of choice (e.g., Trader Joe’s Green Goddess seasoning, salt, paprika)
1 package Apple Gouda Chicken Sausage (found at Target)
1 bag of green beans (microwaveable)
1 cup cherry tomatoes, halved
Sea salt, to taste
Pepper, to taste
Optional: BBQ sauce, ketchup, and/or honey mustard for serving
Instructions
Prepare the Potatoes
Bring a pot of water to a boil, add the potato wedges, and boil for about 10 minutes until fork-tender.
Drain the potatoes and toss in a bowl with your chosen spices and olive oil.
Place in the air fryer and cook potato wedges at 400°F for 20 minutes, shaking the basket every 5–7 minutes to ensure even crispiness.
Cook the Chicken Sausage
Heat a pan over medium heat and spray lightly with olive oil.
Add the chicken sausage and pan-fry until crispy, about 5–7 minutes.
Prepare the Green Beans
Microwave the green beans in their bag for 4 minutes, cutting a small vent in the bag to release steam.
Season the Cherry Tomatoes
Slice the cherry tomatoes in half and season them with sea salt and pepper to taste.
Assemble and Serve
Combine the potatoes, chicken sausage, green beans, and cherry tomatoes in a large serving bowl.
Serve with your favorite dipping sauces, such as BBQ sauce, ketchup, or honey mustard, if desired.
This dish is quick, healthy, high in protein, and perfect for a busy weeknight dinner!
