Chicken Sausage, Peppers, and Rice Pilaf Meal Prep

Ingredients (Makes 3 Servings):

1 box rice pilaf mix (I like garlic and herb flavor)
3 bell peppers, sliced
2 zucchini, chopped
1 red onion, sliced
6 chicken sausages (applewood smoked flavor recommended), sliced into coins
1 tbsp olive oil
Seasoning of choice (suggested: salt, pepper, garlic powder)
Instructions:
Cook the Rice: Prepare the rice pilaf according to package instructions, preferably in a rice cooker for convenience.
Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add the chopped peppers, zucchini, and onion, seasoning to taste. Sauté for about 10 minutes until tender.
Cook the Sausages: In a separate skillet or air fryer, cook the sausage slices until browned on both sides.
Assemble & Store: Divide the cooked rice, sautéed veggies, and sausage evenly into three meal prep containers. Let cool before sealing.
Enjoy! Store in the fridge and microwave for 5 minutes before serving.
