Cauliflower Egg Fried Rice Bowl

Ingredients

  • 1 tbsp sesame oil

  • 1 bag Trader Joe's Fried Asian-Style Cauliflower Rice

  • 1 bag Trader Joe's Veggie Fried Rice

  • 2 cups chopped frozen spinach

  • 4 eggs

  • Soy sauce (about 2 tbsp or to taste)

  • Sesame seeds

  • Green onions, sliced

  • Frozen dumplings or gyoza

  • Sweet chili sauce


Directions

  1. Heat the oil: In a large skillet, warm the sesame oil over medium heat for 1-2 minutes.

  2. Cook the rice and veggies: Add the cauliflower rice, veggie fried rice, and spinach to the skillet. Cook for about 10 minutes, stirring occasionally, until everything is defrosted and begins to crisp.

  3. Cook the eggs: In a separate small skillet, scramble 4 eggs. Add the eggs to the rice and veggie mixture once it has finished cooking and mix well to incorporate.

  4. Season: Add soy sauce to your liking (about 2 tbsp). Mix well, then turn off the heat. Top with sliced green onions.

  5. Prepare the dumplings: Cook the frozen dumplings or gyoza according to the package instructions. (For a crispy texture, air fry for about 5 minutes.)

  6. Assemble: Add the dumplings to the bowl with the rice mixture. Drizzle sweet chili sauce on top and sprinkle with sesame seeds.

  7. Serve and enjoy: Pair with optional seaweed snacks if desired, and dig in!


Note: This recipe makes 4-6 servings and stores well in the fridge for up to 4 days.
