BBQ Sweet Potato Bowls

Ingredients

2 sweet potatoes, peeled and cubed
1 tbsp olive oil
1 tsp each:
Smoked paprika
Salt
Pepper
Citrus seasoning blend or chili lime seasoning
1 bag microwaveable green beans
½ lemon
Chicken tenders (raw)
Panko breadcrumbs
1 egg
Parmesan cheese (optional)
Seasonings of choice
BBQ sauce (homemade or store-bought)

Instructions
Prepare the sweet potatoes: Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, pepper, and citrus/chili lime seasoning. Set aside.
Bread the chicken: Whisk the egg in a bowl. In a separate bowl, mix the panko breadcrumbs with Parmesan (if using) and your preferred seasonings. Dip each chicken tender into the egg, then coat with the breadcrumb mixture. (Shortcut: You can use pre-made frozen chicken tenders if you are short on time, I love the Real Good brand.)
Cook:
Place the sweet potatoes and breaded chicken tenders in an air fryer. Cook at 400°F for 15 minutes.
After 15 minutes, remove the chicken and continue cooking the sweet potatoes for another 5 minutes until crispy and tender.
Steam the green beans: Pierce the bag of green beans with a fork and microwave according to package instructions (typically 4 minutes).
Assemble the bowls: Divide the sweet potatoes, chicken tenders, and green beans between two bowls. Squeeze fresh lemon juice over the top and drizzle with BBQ sauce.
