Banana Muffins with Rich Chocolate Frosting

For the Muffins
3 Very Ripe Bananas
1.5 Cups All Purpose Flour
¼ Cup Cake Flour
1 Tsp Baking Powder
1 Tsp Baking Soda
½ Tsp Salt
1 Stick Unsalted Butter (Room Temp)
½ Cup Granulated Sugar
2 Eggs
1 Tsp Pure Vanilla Extract
For the Frosting
¼ Cup Unsalted Butter, melted
1/3 Cup Cacao Powder
2 Cups Confectioner’s Sugar
3 Tbs Milk
Sprinkles (optional)
Instructions
Preheat the oven to 350 Degrees. Line a 12-cup muffin tin with paper liners.
Mash the bananas in a small bowl and set aside.
In a medium bowl, combine the flours baking powder, baking soda, and salt. Mix and set aside.
Using a hand-held mixer, cream together the butter and sugar, mixing for 3-5 minutes. Add the eggs one at a time, continuing to mix. Add the vanilla and banana until uniform.
Slowly mix in the flour mixture using a large rubber spatula until combined.
Divide the batter into the 12 prepared muffin tins and bake for 20-22 minutes.
While the muffins are baking, combine the frosting ingredients in a bowl and mix well using a hand mixer.
Allow the muffins to cool for 1 hour before frosting, and store refrigerated for the frosting to take on a rich fudgy texture. Enjoy!
