Banana Muffins with Rich Chocolate Frosting

For the Muffins 

  • 3 Very Ripe Bananas

  • 1.5 Cups All Purpose Flour

  • ¼ Cup Cake Flour

  • 1 Tsp Baking Powder

  • 1 Tsp Baking Soda

  • ½ Tsp Salt

  • 1 Stick Unsalted Butter (Room Temp)

  • ½ Cup Granulated Sugar

  • 2 Eggs

  • 1 Tsp Pure Vanilla Extract 


For the Frosting

  • ¼ Cup Unsalted Butter, melted

  • 1/3 Cup Cacao Powder

  • 2 Cups Confectioner’s Sugar

  • 3 Tbs Milk

  • Sprinkles (optional)


Instructions

  1. Preheat the oven to 350 Degrees. Line a 12-cup muffin tin with paper liners.

  2. Mash the bananas in a small bowl and set aside.

  3. In a medium bowl, combine the flours baking powder, baking soda, and salt. Mix and set aside. 

  4. Using a hand-held mixer, cream together the butter and sugar, mixing for 3-5 minutes. Add the eggs one at a time, continuing to mix. Add the vanilla and banana until uniform. 

  5. Slowly mix in the flour mixture using a large rubber spatula until combined.

  6. Divide the batter into the 12 prepared muffin tins and bake for 20-22 minutes. 

  7. While the muffins are baking, combine the frosting ingredients in a bowl and mix well using a hand mixer. 

  8. Allow the muffins to cool for 1 hour before frosting, and store refrigerated for the frosting to take on a rich fudgy texture. Enjoy!
