Autumn Grain Bowls

Ingredients

1 package of Parmesan couscous mix
2 heads of broccoli, or 1 bag of broccoli florets
1 package of apple chicken sausages
2 sweet potatoes
2 yellow potatoes
Grated Parmesan cheese (optional for dairy-free)
Olive oil
Salt & pepper
Seasoning blends of choice (I used Trader Joe’s Green Goddess and 21 Seasoning Salute)
Bake the Potatoes
Preheat the oven to 425°F.
Wash the regular potatoes and cut them into cubes. Place the cubes in a bowl of cold water to remove excess starch while you prepare the sweet potatoes.
Peel and cube the sweet potatoes. Drain and rinse the regular potatoes.
Combine both types of potatoes in a large bowl, drizzle with olive oil, and season with salt, pepper, and your choice of seasonings (I used Trader Joe’s Green Goddess and smoked paprika).
Spread the potatoes evenly on a sheet pan and bake for about 30 minutes, or until they are crispy on the outside and soft on the inside.
Cook the Broccoli
While the potatoes are baking, chop the broccoli into medium-sized florets.
Arrange the florets on a separate baking tray and spray with olive oil or avocado oil. Season with salt, pepper, and your preferred seasoning blend (I usedTrader Joe’s 21 Seasoning Salute).
Place the broccoli in the oven for the final 10 minutes of the potato cooking time.
Cook the Sausages: Slice the apple chicken sausages into coins. Air fry at 370°F for 6-8 minutes, until golden brown.
Cook the Couscous: Prepare the Parmesan couscous on the stovetop according to the package instructions.
Assemble the Bowls: Use the couscous as the base. Layer on the roasted broccoli, mixed potatoes, and apple chicken sausages. Top with grated Parmesan cheese (optional).
