Apple Pie Oatmeal

Ingredients

  • 1 Honeycrisp apple, chopped

  • 1 tbsp water

  • ½ tbsp maple syrup or honey

  • 1 tbsp cinnamon

  • ½ tbsp pumpkin pie spice

  • ⅓ cup oats

  • 1 cup water or milk of choice

  • 1 tsp chia seeds

  • ½ cup vanilla Greek yogurt

  • ¼ cup granola of choice (I love Purely Elizabeth brand!)


Instructions

  1. Sauté the apples: In a sauté pan over medium heat, combine the chopped apple, water, maple syrup (or honey), cinnamon, and pumpkin pie spice. Cook for 5-10 minutes until the apples are softened and fragrant. Set aside.

  2. Make the oatmeal: In the same pan, add oats and water (or milk). Cook on low-medium heat until it begins to simmer. Stir in chia seeds and continue stirring until the oatmeal thickens.

  3. Assemble: Add the oatmeal to a bowl. Top with a layer of vanilla Greek yogurt, followed by the spiced apples. Finish with a sprinkle of granola for crunch.
